Tomato-Cucumber Salad

Serves 4 (1 cup serving)

½ red onion, thinly sliced 4 tomatoes, diced 1 cucumber, seeded and sliced ¼ cup of mint, thinly sliced (optional)¼ cup oil ½ lemon, juiced Salt ¼ cup of goat cheese, crumbled (optional)

Soak onion in cold water. Pat dry tomato and cucumber; toss with a handful of mint. Drain the onion, squeeze dry and add to the salad. Mix oil, lemon juice and a pinch of salt in a bowl. Pour on dressing. Top with crumbled goat cheese.
