COLACHE (MEXICAN ZUCCHINI SIDE DISH)

Preparation Time: 20-30 min Servings: 4-5

4 medium size zucchinis (finely diced) 2 cloves of garlic (cut in half) 1/3 cup of diced onion chopped cilantro, salt, pepper, and oil to taste 1/4 cup boiling water 1/4 cup cheese (if desired, any brand that melts will work)


Place oil and garlic over medium heat in a pan. Sautee until garlic cloves turn lightly brown. Add diced zucchini and onion, sauté until zucchini obtains a transparent appearance. Add water, chopped cilantro, salt and pepper to taste. Cover, reduce heat and cook for five minutes. If you wish to add a cheese do so at this time. This recipe is a great side dish.
