1 cup brown or white rice
1 tablespoon oil
1 cup chopped onion
4 ounces sliced mushrooms
8 ounces chicken thighs cut into bitesize pieces or ground beefSalt and pepper
1 ½ cups milk
3 tablespoons flour
3ounces shredded cheese
Cook rice according to package. Cook onion, mushrooms, and chicken in ovenproof skillet, sprinkle with salt and pepper, cook about 6 minutes until chicken and onions are done. Combine milk and flour, stirring until smooth. Stir milk mixture into chicken mixture in skillet, cook until bubbly and thick, stirring frequently. Stir in salt, rice and vegetables. Sprinkle with cheese, broil 1 minute until cheese melts and just begins to brown.
