Southwest Rice Skillet

1 clove garlic minced 1 small onion chopped finely 1 red and 1 green bell pepper diced (optional) 1 can black or pinto beans drained and rinsed 1 cup chopped tomatoes or, for more flavor, use 1 cup fresh salsa1T chili powder 2 tsp cumin 2 cups cooked rice 1 cup shredded cheddar cheese Cooked Chicken, cut into bite size pieces (optional)


Sauté garlic and onion in vegetable oil- then add bell pepper until done. Add beans and tomatoes or salsa until warm and add spices. Add rice and meat and warm through. Place in casserole dish and top with shredded cheese. Bake at 350 until cheese is melted. Top with fresh cilantro.
